The climate is temperate and humid, and the soil is volcanic with natural iron content. Coffee trees grow under shade between cafetales, allowing the cherries to ripen slowly and evenly. This lot is made from the Castillo variety and processed using a traditional washed method. After a day of fermentation, the beans are dried on raised beds, preserving clarity and sweetness.
