Norte de Santander: A Traceable Colombian Specialty Coffee With Depth and Character

Written by Stephanie Knoch

If you are exploring Colombian specialty coffee and want to understand how origin shapes flavor, Norte de Santander is a region worth discovering. Located in the municipality of Arboleda, in the community of Cinera, this high-altitude coffee reflects both tradition and innovation in modern Colombian production.

This microlot comes from La Peligrosa Farm, led by producer Elmer Rasmith Buitrago, part of a traditional coffee-growing family with three generations dedicated to the craft. The farm sits at approximately 5,575 feet above sea level, where average temperatures reach about 72 degrees Fahrenheit and annual rainfall ranges between 1,800 and 2,000 millimeters. These conditions allow cherries to mature steadily, developing structure and clarity in the cup.

The lot is grown from Castillo, Tabi, and Cenicafé 1 varieties and harvested during the April to May and October to December seasons of 2025. The cherries are carefully selected at full ripeness and undergo hydraulic classification before entering anaerobic natural fermentation. Drying takes place in a solar-covered greenhouse, protecting the beans while preserving sweetness and complexity. The farm carefully separates each harvest by section, ensuring full traceability and consistency. That means the flavor in your cup reflects one precise origin, not a mixture of different farms.

In the cup, this Colombian natural process coffee offers a sweet and fruity fragrance, with wine-like notes, red fruits, and blackberry tones. The acidity is medium citrus, and the body is silky and balanced. With an SCA score of 86.5, this coffee qualifies as specialty grade under international standards, delivering both character and approachability for coffee lovers seeking fruit-forward profiles with elegance.

Norte de Santander represents a new generation of traceable Colombian specialty coffee. With more than ten years producing specialty lots and three generations of coffee heritage, La Peligrosa Farm blends history with evolving productivity methods. For anyone researching Colombian coffee regions, natural fermentation processes, or high quality specialty beans, this origin offers both clarity and story. Discover Norte de Santander in our shop and experience a Colombian specialty coffee where traceability, family tradition, and innovation come together in every cup.
